    I’ve been making a lot of Asian noodle salad lately. This is the one I put together for a BBQ. Easiest party dish ever:
Cook soba noodles and rinse in cold water. Mix in a large salad  bowl with sesame oil, soy sauce, rice vinegar, mirin (Japanese rice  wine), and minced garlic. (The noodles will soak up all of the sauce and take on a darker color.)
Add any of the following veggies: bok choy (cooked), shredded  carrots (raw or cooked, depending on your preference), shittake  mushrooms (cooked), spring onions (raw).
Mix and let sit in fridge overnight for best flavor. But you can also serve immediately, though I think it takes better chilled.
