
I’ve been making a lot of Asian noodle salad lately. This is the one I put together for a BBQ. Easiest party dish ever:
- Cook soba noodles and rinse in cold water. Mix in a large salad bowl with sesame oil, soy sauce, rice vinegar, mirin (Japanese rice wine), and minced garlic. (The noodles will soak up all of the sauce and take on a darker color.)
- Add any of the following veggies: bok choy (cooked), shredded carrots (raw or cooked, depending on your preference), shittake mushrooms (cooked), spring onions (raw).
- Mix and let sit in fridge overnight for best flavor. But you can also serve immediately, though I think it takes better chilled.
